  • 3 tbsp unsalted butter
  • 4 cups chicken broth
  • 1/2 to 3/4 cup shredded Parmesan cheese
  • 1/8 tsp fresh nutmeg (optional)
  • 1/2 cup dry white wine
  • 1 lb gnocchi
  • 2 cups fresh spinach (chopped)
  • 1/2 cup sliced celery (finely chopped)
  • 1 to 2 tsp fresh thyme (chopped)
  • 2 large garlic cloves (minced)
  • 1/2 tsp dried Italian herbs
  • Salt to taste
  • 3/4 cup grated carrots
  • 1 tbsp olive oil
  • 1 cup diced yellow onion
  • 2 cups cooked rotisserie chicken (shredded or cubed)
  • 1/4 cup all-purpose flour
  • Fresh ground black pepper to taste

Instructions
 

  • Melt butter and olive oil in a large pot, then sauté onion, carrots, and celery with salt and pepper until softened. Add garlic and cook for 1 minute.
  • Deglaze the pot with wine, simmering until most evaporates, then mix in flour and cook for 1-2 minutes.
  • Whisk in chicken broth, simmering until thickened, then add half-and-half, thyme, and Italian herbs.
  • Add gnocchi and simmer until tender and floating, then stir in Parmesan, chicken, and spinach until heated through.
  • Adjust seasoning with nutmeg, salt, and pepper, serving immediately for a thinner soup or letting it sit for a thicker consistency.

Notes

Rotisserie chicken can be substituted with cooked turkey or canned chickpeas for a vegetarian option. Half-and-half can be replaced with equal parts whole milk and heavy cream or unsweetened plant-based milk with cornstarch for thickness. Gnocchi can be exchanged for small pasta shapes or cauliflower florets, adjusting cooking times accordingly.
