Ingredients
  

Veggies

  • 2 medium zucchinis, cut into thick half-moons or chunks Wash and dry before cutting.

Oil & Seasonings

  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Cheese & Crunch

  • ½ cup finely grated Parmesan cheese
  • ¼ cup panko breadcrumbs (optional) Use for extra crunch.

Preparation

  • Wash and dry the zucchinis, then slice into thick half-moons or bite-sized chunks.
  • In a large bowl, toss zucchini with olive oil, garlic powder, salt, and pepper until well-coated.
  • Sprinkle in Parmesan and panko breadcrumbs. Toss again to coat all sides evenly.

Cooking

  • Preheat your air fryer to 400°F. Arrange zucchini in a single layer (work in batches if needed).
  • Air fry for 12–14 minutes, shaking the basket halfway, until golden and crispy.
  • Transfer to a serving bowl, sprinkle with extra Parmesan, garnish with chopped herbs if desired, and serve hot.

Notes

Slice uniformly for even cooking. Pat zucchini dry to reduce sogginess. Don’t overcrowd the basket to maintain crispiness. Store leftovers in an airtight container and reheat in the air fryer.
