Ingredients
  

  • 2 pounds potatoes, cut into 1 ½- to 2-inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 pounds skinless, boneless chicken breasts, diced into 1 ½-inch pieces
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions
 

  • In a slow cooker, mix potatoes, olive oil, salt, pepper, and paprika until coated, then layer chicken on top and season. Combine Parmesan garlic sauce and water, then pour over the mixture.
  • Cook on High for 4 hours or Low for 6 hours until chicken is cooked and potatoes are tender, then add mozzarella and Parmesan cheese in the last 20 minutes.
  • Serve garnished with parsley.

Notes

The recipe can be adjusted by adding more vegetables, extra cheese, or reducing salt according to personal preference.
