Equipment

  • Electric mixer
  • 5-quart slow cooker
  • casserole dish

Ingredients

  • 16 ounces brick-style cream cheese, softened
  • 1 cup ranch dressing
  • 1 cup buffalo sauce
  • 2 cups mild cheddar cheese, grated
  • 4 cups shredded chicken (from 2½ large poached chicken breasts)

Instructions

  • Beat the softened cream cheese with an electric mixer until smooth, then mix in the ranch dressing and buffalo sauce until combined.
  • Stir in the grated cheddar cheese and shredded chicken until evenly distributed.
  • For the crockpot method, transfer the mixture to a slow cooker and cook on low for 1-2 hours until warm; for the oven method, bake in a casserole dish at 350°F for 20-25 minutes until bubbling.
  • Stir the dip before serving warm with tortilla chips, crackers, or celery sticks.

Notes

To save time, consider using rotisserie chicken. Homemade ranch and buffalo sauce enhance the flavor significantly. For added heat, mix in extra hot sauce or cayenne pepper. Reheat leftovers in the microwave for 30 seconds at a time.
