Ingredients
  

Veggies

  • 2 medium zucchini, shredded Squeeze excess moisture before using.
  • 2 cloves garlic, minced

Cheese & Egg

  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten

Pantry

  • 1/2 cup breadcrumbs Fine breadcrumbs are recommended.
  • to taste Olive oil For baking or air frying.

Herbs & Seasoning

  • 1/4 cup fresh herbs (such as parsley or basil), chopped
  • to taste Salt
  • to taste Pepper

Sauce

  • to taste Marinara sauce for dipping

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) or preheat your air fryer.
  • In a large bowl, combine the shredded zucchini, minced garlic, Parmesan cheese, fresh herbs, breadcrumbs, beaten egg, salt, and pepper. Mix until well combined.
  • Form the mixture into small bites or patties and place them on a baking sheet lined with parchment paper or in your air fryer basket.
  • Drizzle olive oil over the bites if baking, or lightly spray them if using an air fryer.

Cooking

  • Bake for 20–25 minutes or air fry for 10–15 minutes, until golden brown and crispy, flipping once if air frying.

Serving

  • Serve warm with marinara sauce for dipping.

Notes

Squeeze excess moisture from shredded zucchini in a towel to avoid soggy bites. For dairy-free, substitute nutritional yeast for Parmesan and use a flax egg (1 tbsp ground flax + 3 tbsp water). Store cooled bites in an airtight container in the fridge for up to 3 days, or freeze for longer.
