Ingredients
  

  • 8 oz cream cheese, softened
  • 1/2 cup crushed pineapple, well drained
  • 1/2 cup powdered sugar
  • 1/2 cup pecans, chopped and toasted
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 cup extra chopped pecans, for coating
  • assorted crackers or veggie sticks for serving
  • fresh parsley or chives for garnish

Instructions
 

  • Warm a skillet over low heat and toast chopped pecans until fragrant and golden. Set aside to cool.
  • In a bowl, mix softened cream cheese, crushed pineapple, powdered sugar, vanilla, and garlic powder until smooth.
  • Fold in most of the toasted pecans, saving some for coating.
  • Shape into a ball, wrap in plastic, and refrigerate for 1–2 hours until firm.
  • Unwrap and roll in remaining pecans. Garnish with parsley or chives.
  • Serve with assorted crackers or veggie sticks.

Notes

Drain pineapple thoroughly for best texture. Chill the cheese ball for at least 1 hour before serving.
