  • 1 3/4 cups buttermilk Use cold for best rise.

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, whisk together the flour, baking soda, and salt.
  • Make a well in the center and pour in the buttermilk.
  • Stir until a sticky dough forms.
  • Turn the dough onto a floured surface and knead gently.
  • Shape the dough into a circle and place it on a baking sheet.
  • Cut a deep cross into the top of the dough.

Baking

  • Bake for 30-35 minutes or until golden brown.
  • Let cool before slicing.

Notes

Slice the bread thick or thin. Serve with butter, jam, or cheese. It pairs well with soups and stews. For longer storage, wrap in plastic and freeze slices for up to one month.
