Ingredients
  

  • 1 cup Long-grain white rice
  • 2 cups Water
  • 1 tablespoon Olive oil
  • 1 pound Ground beef (or ground turkey)
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 packet Taco seasoning mix
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 cup Cherry tomatoes
  • 1 cup Shredded cheddar cheese
  • 1 medium Avocados
  • 1/4 cup Fresh cilantro
  • 1 unit Lime wedges
  • Salt and pepper
  • Optional toppings: jalapeño slices, sour cream, salsa

Instructions
 

  • Rinse the rice and cook it in boiling water for 15 minutes, then let it sit covered for 5 minutes.
  • Sauté chopped onion and minced garlic in olive oil until translucent.
  • Add ground beef or turkey, cooking until browned, then drain excess fat.
  • Stir in taco seasoning, black beans, and corn, cooking until heated through.
  • Serve rice in bowls topped with the meat mixture, cherry tomatoes, cheese, and avocado.
  • Garnish with cilantro and serve with lime wedges.
  • Add optional toppings like jalapeños, sour cream, and salsa as desired.

Notes

Taco seasoning can be made from scratch for ingredient control. Avocado adds creaminess and healthy fats. This recipe is flexible for using leftover vegetables and can be customized to suit individual preferences.
