  • 12 oz spaghetti, penne, or your choice
  • 1 cup sun-dried tomatoes (chopped)
  • 2–3 tbsp olive oil (from jarred tomatoes or extra-virgin)
  • 2–3 cloves garlic (minced)
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 cup fresh basil (chopped)
  • Salt (to taste)
  • Pepper (to taste)

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30–60 seconds.
  • Add the chopped sun-dried tomatoes to the skillet and cook for a few minutes to release their flavor.
  • Toss in the cooked pasta and mix well to combine the flavors, adding a splash of reserved pasta water if needed to loosen the sauce.
  • Add grated Parmesan cheese and fresh basil, tossing until the cheese melts and coats the pasta. Season with salt and pepper to taste.
  • Serve hot, garnished with additional basil and cheese if desired.

Notes

For successful cooking, soak dry sun-dried tomatoes in hot water for 10 minutes if needed. Ensure pasta is al dente for best texture when combined with sauce.
