Ingredients
  

Crust

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • Pinch of salt

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped (or 1 cup Cool Whip)

Fruit Topping

  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced
  • 1 cup mango or peaches, sliced
  • Optional: raspberries, blackberries, or sliced grapes

Glaze & Garnish

  • 1/4 cup apricot jam or honey (warmed and strained)
  • Fresh mint leaves for garnish
  • 1 zest of 1 lime (optional)

Instructions
 

Preparation

  • Preheat oven to 350°F and line a large round pizza pan or baking sheet with parchment paper.
  • Make the crust: cream butter and sugar, beat in egg and vanilla, then stir in flour, baking powder, and salt until a soft dough forms. Press dough into the pan to create an even round crust.
  • Bake crust for 12–15 minutes or until lightly golden at the edges; let cool completely on a wire rack.

Filling

  • Prepare filling: beat cream cheese with powdered sugar and vanilla until smooth, then fold in whipped cream until light and fluffy. Chill briefly to firm up if needed.

Assembly

  • Spread the cream cheese filling evenly over the cooled crust, leaving a small border.
  • Arrange fruit on top in a decorative pattern, working from the outside in for best presentation.
  • Brush fruit lightly with warmed apricot jam or honey to add shine and help preserve freshness. Garnish with mint and lime zest if desired.
  • Chill for 30 minutes before slicing; serve cold or at cool room temperature.

Notes

Cool the crust completely before spreading filling to prevent melting or sliding. Use ripe but firm fruit to maintain shape and avoid sogginess. If making ahead, add delicate fruit like bananas just before serving to prevent browning.
