Ingredients
  

  • 2 cups (240g) sugar cookie crumbs (10-12 cookies)
  • 4 oz (113g) cream cheese at room temperature
  • 1/4 teaspoon vanilla extract (optional)
  • 10 oz (283g) vanilla melting wafers
  • holiday sprinkles
  • 1/8 cup reserved melting wafers for drizzling

Instructions
 

  • Line a baking sheet with parchment paper and set aside.
  • Pulse sugar cookies in a food processor until fine crumbs form.
  • Mix cookie crumbs with softened cream cheese until well combined.
  • Roll 1 tablespoon of the mixture into a ball and place it on the baking sheet.
  • Freeze the balls for 15-20 minutes until firm.
  • Melt the melting wafers in a microwave-safe bowl at 50% power, stirring every 30 seconds until smooth.
  • Dip the chilled balls into the melted coating, tap off excess, and place back on parchment.
  • Add sprinkles immediately before the coating sets.
  • Chill the truffles for 5 minutes between batches.
  • Drizzle remaining melted coating over the set truffles.
  • Refrigerate until ready to serve.

Notes

Ensure cream cheese is at room temperature for easier mixing. Keep truffles chilled during the coating process and work with small batches to maintain temperature. Store truffles in the refrigerator for up to 5 days or freeze for up to 1 month, thawing overnight in the fridge.
