  • 2 cups strawberries, hulled and sliced

Dairy

  • 1 cup mascarpone cheese Use room-temperature for easier folding.
  • 1 cup heavy cream Whipped until soft peaks form.

Sweetener & Flavor

  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Base

  • 1 package ladyfingers Briefly dipped in coffee.

Liquid

  • 1 cup brewed coffee, cooled

Topping

  • Cocoa powder for dusting

Preparation

  • In a bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
  • Gently fold in the mascarpone cheese until the mixture is smooth and fluffy.
  • Briefly dip each ladyfinger in the cooled brewed coffee—do not soak—and lay them in a single layer in your serving dish.
  • Spread half of the mascarpone mixture evenly over the ladyfingers.
  • Scatter half of the sliced strawberries over the cream.
  • Repeat the layers with remaining ladyfingers, mascarpone mixture, and strawberries.
  • Cover and refrigerate for at least 4 hours or overnight; before serving, dust the top with cocoa powder.

Notes

Serve chilled with extra sliced strawberries on top. Add a sprig of mint and a dusting of powdered sugar for a pretty finish. For best texture, serve within 2 days of assembling.
