Ingredients
  

  • 3 large eggs, beaten
  • 2 cups cottage cheese Can be replaced with ricotta.
  • 10 ounce frozen chopped spinach, thawed and well drained 1.5 cups of cooked fresh spinach can be used as a substitute.
  • 1/3 cup crumbled feta cheese
  • 1/3 cup diced sweet onion Sautéing can enhance flavor.
  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • Dash of nutmeg

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 1.5-quart casserole dish.
  • In a large bowl, mix together all ingredients and pour the mixture into the prepared dish.
  • Bake uncovered for 40-45 minutes until the center is almost set.
  • Allow to cool for 5-10 minutes before slicing and serving.

Notes

For best results, squeeze excess moisture from the spinach to prevent a watery casserole. Additional vegetables like artichoke hearts or mushrooms can be added for variety.
