  • 1 lb Italian sausage browned & drained
  • 2 15 oz cans Italian diced tomatoes
  • 4 cups vegetable or chicken broth (32 oz container)
  • 8 oz cream cheese (cubed)
  • 1 20 oz bag frozen cheese tortellini
  • 3-4 cups fresh spinach

Instructions
 

  • Combine the browned sausage, broth, diced tomatoes, and cream cheese in a slow cooker, stirring well, and cook on LOW for about 4 hours until the cream cheese melts.
  • Add the spinach and frozen tortellini, cooking for an additional 30 minutes until the tortellini is tender.
  • Serve immediately and refrigerate leftovers for up to 3 days.

Notes

Tortellini may continue to cook if left in the slow cooker, so it is recommended to serve immediately. Refrigerated tortellini can be used, but it may cook faster. Additional ingredients like minced garlic or spices can be added for extra flavor.
