Ingredients
  

  • 1 lb Italian sausage browned & drained
  • 2 15 oz cans Italian diced tomatoes
  • 4 cups vegetable or chicken broth (32 oz container)
  • 8 oz cream cheese (cubed)
  • 1 20 oz bag frozen cheese tortellini
  • 3-4 cups fresh spinach

Instructions
 

  • Combine the browned sausage, broth, diced tomatoes, and cream cheese in a slow cooker, mixing well, and cook on LOW for about 4 hours until the cheese melts.
  • Add the spinach and frozen tortellini, then cook for an additional 30 minutes until the tortellini is tender.
  • Serve hot and refrigerate leftovers for up to 3 days.

Notes

Tortellini may continue to cook if left in the slow cooker, so it is recommended to serve immediately. Refrigerated tortellini can be used, but it may require less cooking time. Additional ingredients such as minced garlic or spices like cayenne can be added for extra flavor.
