Slow Cooker Chicken Breasts

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil or melted butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth or water

Instructions
 

  • Pat chicken breasts dry and rub with olive oil or melted butter to help the seasoning stick.
  • In a small bowl, combine garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Rub mixture evenly over chicken.
  • Place chicken in the slow cooker in a single layer. Pour chicken broth around (not over) the chicken.
  • Cover and cook on LOW for 3 to 4 hours or on HIGH for 2 to 2.5 hours, until internal temperature reaches 165°F.
  • Let rest 5 minutes before slicing or shredding. Serve as desired or store for later.

Notes

You can easily double the recipe to meal prep for the week. Try seasoning variations like BBQ rub, lemon pepper, or taco mix.
