Savory Pumpkin Pizza with Caramelized Onions

When the air turns crisp and cozy, nothing feels better than a warm slice of savory pumpkin pizza. Creamy pumpkin puree, golden caramelized onions, and bubbly Havarti melt together on a rustic crust for a fall dinner that smells like comfort and tastes like magic.

Ingredients
  

  • 1 ready-to-bake pizza dough
  • 1.5 cups pumpkin puree
  • 1 sweet onion diced
  • 1 teaspoon sugar
  • 2 cloves garlic minced
  • 1 shallot diced
  • ½ tablespoon fresh thyme chopped
  • Salt and pepper to taste
  • ½ cup freshly grated parmesan cheese
  • 2 cups freshly grated Havarti cheese
  • 1 cup arugula
  • Extra virgin olive oil for cooking and drizzling

Instructions
 

  • Warm olive oil in a skillet over medium low. Add half the onions and stir occasionally. Sprinkle in the sugar and cook until golden and soft.
  • In a bowl, stir together pumpkin puree, garlic, shallot, thyme, the remaining uncooked onions, and parmesan. Season with salt and pepper.
  • Stretch or roll your dough into a circle to fit your pizza stone or baking sheet. Preheat oven to 350°F.
  • Spread the pumpkin mixture evenly across the dough. Top with caramelized onions, arugula, and grated Havarti.
  • Bake until crust is golden and cheese bubbles, about 12 minutes or longer if you prefer extra crisp. Slice hot and serve immediately.

Notes

Use a pizza stone for extra crunch, or a baking sheet if that’s what you have. Caramelize all the onions for more sweetness. Adjust bake time depending on how crisp you like your crust.
