- 1 lb ground Italian sausage
- 1 tablespoon butter
- 1/3 cup diced red onion
- 1/3 cup diced green pepper or jalapeño
- 3 garlic cloves minced
- 1 can diced tomatoes or 3 fresh tomatoes, seeded & diced
- 12 oz bag riced cauliflower or 1 head, riced
- 2 tablespoons taco seasoning
- 3/4 cup chicken broth
- 1 1/2 cups shredded cheddar or mozzarella
- 1/2 cup Monterey Jack cheese
- Chopped fresh cilantro for garnish
1. Heat butter in a large skillet over medium-high, add sausage and cook until browned.
2. Add diced onion, green pepper, and garlic; sauté until fragrant.
3. Steam cauliflower rice in microwave or stovetop.
4. Add taco seasoning, tomatoes, broth, and cauliflower rice. Simmer 5–7 minutes until liquid reduces.
5. Cover and cook another 5 minutes on low. Adjust seasoning as needed.
6. Sprinkle cheese on top, cover until melted. Garnish with cilantro and serve warm.
Swap in ground turkey for a leaner option.
Top with jalapeños or lime slices for extra zing.
Leftovers keep well in the fridge for 3 days.
Add more broth if mixture gets too thick while cooking.
