Ingredients
  

  • 1 lb ground Italian sausage
  • 1 tablespoon butter
  • 1/3 cup diced red onion
  • 1/3 cup diced green pepper or jalapeño
  • 3 garlic cloves minced
  • 1 can diced tomatoes or 3 fresh tomatoes, seeded & diced
  • 12 oz bag riced cauliflower or 1 head, riced
  • 2 tablespoons taco seasoning
  • 3/4 cup chicken broth
  • 1 1/2 cups shredded cheddar or mozzarella
  • 1/2 cup Monterey Jack cheese
  • Chopped fresh cilantro for garnish

Instructions
 

  • 1. Heat butter in a large skillet over medium-high, add sausage and cook until browned.
  • 2. Add diced onion, green pepper, and garlic; sauté until fragrant.
  • 3. Steam cauliflower rice in microwave or stovetop.
  • 4. Add taco seasoning, tomatoes, broth, and cauliflower rice. Simmer 5–7 minutes until liquid reduces.
  • 5. Cover and cook another 5 minutes on low. Adjust seasoning as needed.
  • 6. Sprinkle cheese on top, cover until melted. Garnish with cilantro and serve warm.

Notes

Swap in ground turkey for a leaner option.
Top with jalapeños or lime slices for extra zing.
Leftovers keep well in the fridge for 3 days.
Add more broth if mixture gets too thick while cooking.
