Ingredients
  

  • 1 lb sausage (Italian or chicken)
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Peel and cube the sweet potatoes. Heat olive oil in a skillet over medium heat and brown the sausage for 5-7 minutes.
  • Add the sweet potatoes to the skillet and cook for an additional 5 minutes until they start to soften.
  • In a bowl, mix honey, garlic, soy sauce, paprika, salt, and pepper, then pour over the sausage and sweet potatoes.
  • Cover the skillet and simmer for about 10 minutes until the sweet potatoes are tender.
  • Serve hot, garnished with chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Variations include using turkey sausage or butternut squash as substitutes.
