Ingredients
  

Protein

  • 1 lb shrimp, peeled and deveined

Veggies & Greens

  • 2 ripe avocados, diced
  • Mixed greens or lettuce for serving

Sauce & Oil

  • 1/4 cup fresh lime juice
  • 2 tbsp olive oil
  • 1 clove garlic, minced

Herbs & Seasoning

  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (optional)

Preparation

  • In a bowl, whisk together the lime juice, olive oil, garlic, salt, and pepper until combined.
  • Heat a skillet over medium heat and add a drizzle of oil if needed.
  • Sauté the shrimp until pink and opaque, about 2–3 minutes per side.
  • In a large bowl, combine the cooked shrimp, diced avocado, and cilantro.
  • Drizzle with the lime dressing and toss gently to coat.
  • Serve immediately over mixed greens or lettuce.

Notes

Don’t overcook the shrimp; remove when just opaque to keep them tender. Add avocado last and fold gently to avoid mashing. For extra zest, grate a bit of lime zest into the dressing. Store shrimp and dressing separately from greens to keep everything crisp.
