Ingredients
  

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh basil pesto store-bought or homemade
  • 4 pieces flatbread store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Season the chicken breasts with salt and pepper.
  • Cook the chicken in olive oil over medium-high heat for 6-7 minutes on each side until golden brown.
  • Let the chicken rest for 5 minutes before slicing into thin strips.
  • Spread basil pesto on each flatbread and top with sliced chicken.
  • Sprinkle mozzarella cheese and halved cherry tomatoes over the chicken.
  • Top with grated Parmesan cheese and bake for 10-12 minutes until cheese is melted.
  • Optionally broil for 1-2 minutes for extra crispiness.
  • Let cool for a minute, then slice and garnish with fresh basil if desired.
  • Serve warm with a side salad or dipping sauce.

Notes

Customize toppings with preferred vegetables or spices. For a vegetarian version, replace chicken with grilled vegetables or tofu.
