Ingredients
  

  • 4 large russet or golden potatoes, diced
  • 2 1/2 cups chicken stock or broth
  • 1/2 small sweet yellow onion, diced (optional)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup all-purpose flour
  • 1/2 cup butter
  • 3/4 cup heavy cream
  • 8 slices bacon, cooked and crumbled
  • 3/4 cup cheddar cheese, plus more for topping (optional)
  • 1/4 cup green onions, diced
  • Water, enough to cover the potatoes for boiling

Instructions
 

  • Dice the potatoes and boil them until tender, then set aside.
  • In a large pot, combine the broth, onions, salt, pepper, and water, and simmer for about 20 minutes.
  • Melt the butter in a separate saucepan and whisk in the flour to create a roux, cooking for a few minutes.
  • Gradually add the roux to the simmering broth while whisking to thicken the soup.
  • Stir in the heavy cream and let the soup simmer for another 20 minutes.
  • Add the diced potatoes to the soup and mix well.
  • Serve hot, garnished with cheese, bacon bits, and green onions.
