- 8 oz pasta penne, fettuccine, or rigatoni work best
- 1 lb boneless skinless chicken breast cubed
- 1 tbsp olive oil
- 1 tbsp butter
- ½ cup finely chopped onion
- 3 cloves garlic minced
- 1 cup heavy cream full-fat
- ½ cup freshly grated Parmesan cheese
- ½ cup sun-dried tomatoes chopped
- ½ tsp Italian seasoning
- ¼ tsp smoked paprika
- ¼ tsp red pepper flakes adjust to taste
- Salt and black pepper to taste
- Reserved pasta water as needed to thin sauce
- Fresh basil leaves for garnish
Bring salted water to a boil. Cook pasta until al dente, reserve ½ cup pasta water, and drain.
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.
In the same pan, melt butter. Sauté onion until soft, then stir in garlic until fragrant.
Lower the heat and pour in heavy cream. Stir in Parmesan cheese slowly until melted.
Add sun-dried tomatoes, Italian seasoning, paprika, red pepper flakes, salt, and pepper. Simmer gently for 3 minutes.
Return chicken to the skillet. Stir to coat, then add pasta and pasta water. Mix until the sauce thickens and coats everything.
Taste and adjust seasoning. Garnish with basil and extra Parmesan before serving.
