Ingredients
  

Vegetables

  • 2 medium zucchini (about 1.5 lbs) Trimmed and sliced

Oil

  • 1.5 tbsp olive oil

Cheese & Spices

  • 2 tbsp parmesan, grated
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

Preparation

  • Rinse zucchini and pat dry with a paper towel; trim both ends. Cut into 1/2-inch thick slices and either leave as rounds or cut each slice into four pieces for cubes.
  • In a small bowl, mix onion powder, garlic powder, oregano, salt, black pepper, and grated parmesan.
  • Add zucchini to a large mixing bowl and pour in the olive oil; toss to coat evenly.
  • Add the spice and parmesan mix to the zucchini and toss again until each piece is coated.

Cooking

  • Preheat the air fryer to 380°F and arrange zucchini in a single layer in the basket; cook in batches if needed.
  • Air fry at 380°F for 12 to 15 minutes, shaking the basket halfway through until golden brown (cook 10 minutes for al dente). Serve warm and garnish with extra parmesan.

Notes

Do not overcrowd the basket; single layer yields the crispiest result. Shake the basket halfway to promote even browning. For firmer zucchini, cook toward the lower end of the time range (about 10 minutes). Store cooled leftovers in an airtight container for 2–3 days and reheat briefly in the air fryer.
