Ingredients
  

Veggies

  • 2 medium zucchinis

Coating

  • 1 cup breadcrumbs (whole wheat or gluten-free)
  • 1/2 cup grated Parmesan cheese (optional)

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Oil

  • Cooking spray or olive oil

Preparation

  • Preheat the air fryer to 400°F (200°C).
  • Cut the zucchinis into fry shapes, about 3 inches long and 1/2 inch thick.
  • In a bowl, combine breadcrumbs, Parmesan (if using), garlic powder, paprika, salt, and pepper.
  • Dip each zucchini piece into the breadcrumb mixture, pressing to coat evenly.

Cooking

  • Place fries in a single layer in the air fryer basket, spray lightly with cooking spray or brush with oil.
  • Cook for 10–12 minutes, shaking the basket halfway, until golden and crispy.
  • Serve warm with your favorite dipping sauce.

Notes

Pat zucchinis dry before coating to help crumbs stick and get crispier. Don't overcrowd the basket; cook in batches for the best crunch. Spray or brush lightly with oil to encourage browning without extra calories. Reheat leftovers in the air fryer at 350°F for 3–5 minutes to refresh crispness.
