Ingredients

  • 2 medium Cucumbers, sliced
  • 2-3 medium Tomatoes, sliced Use ripe but firm tomatoes to avoid a watery salad.
  • 1 handful Fresh basil, leaves

Cheese

  • 8 oz Fresh mozzarella cheese, sliced or small balls

Dressing

  • 2 tbsp Olive oil
  • 1 tbsp Balsamic vinegar

Spices & finish

  • to taste Salt Season to taste.
  • to taste Pepper Season to taste.

Preparation

  • Slice cucumbers, mozzarella, and tomatoes into bite-sized pieces and place in a large bowl.
  • Layer cucumbers, mozzarella, and tomatoes with fresh basil leaves in a bowl for even distribution.
  • Drizzle olive oil and balsamic vinegar over the layered ingredients.
  • Season with salt and pepper to taste, starting light and adjusting as needed.
  • Toss gently to combine and serve immediately for best texture, as chilled leftovers soften faster.
  • For a creamier version, fold in a spoonful of ricotta or a light mayo-based dressing.

Notes

Chill cucumbers briefly for extra crunch before assembling. Dress just before serving to keep mozzarella and tomatoes from becoming soggy. Store leftovers in an airtight container up to 2 days, but expect a softer texture.
