Ingredients

Cake base

  • 1 box cake mix (vanilla or yellow) plus eggs, oil, and water called for on the box

Jello mixture

  • 1 box Jello (any flavor)
  • 1 cup boiling water
  • 1 cup cold water

Topping

  • 1 container whipped topping (like Cool Whip)
  • 1/2 cup milk

Instructions

Preparation

  • Bake the cake according to package instructions in a 9 x 13 inch pan.
  • Let the cake cool about 10 minutes so it firms slightly but is still warm.
  • Poke holes all over the cake with a fork or skewer so the Jello can soak in.
  • In a bowl, stir the Jello powder into 1 cup boiling water until fully dissolved, then stir in 1 cup cold water.
  • Pour the Jello evenly over the cake, making sure it fills the holes, then refrigerate at least 2 hours until set.
  • Once set, spread the whipped topping mixed with 1/2 cup milk over the chilled cake, slice, and serve chilled.

Notes

Serve with fresh berries or sliced bananas for extra color and texture. Add a sprinkle of toasted coconut or chopped nuts on top for crunch. Pair with a scoop of vanilla ice cream for an indulgent treat. Slice into squares and present on a pretty platter for parties; try a colorful take inspired by a rainbow Jello poke cake.
