Ingredients

Cake

  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs

Jell-O mixture

  • 1 box (3 oz) Jell-O mix (any flavor) Choose your favorite flavor.
  • 1 cup boiling water
  • 1/2 cup cold water

Topping

  • 1 container (8 oz) whipped topping
  • Fresh fruit for garnish (optional) Berries or kiwis work well.

Instructions

Preparation

  • Preheat your oven according to the cake mix instructions and grease a baking dish.
  • In a mixing bowl, combine the cake mix, 1 cup water, 1/3 cup oil, and 3 eggs; mix until smooth.
  • Pour batter into the prepared dish and bake as directed on the box, then cool about 10 minutes.
  • Use a fork to poke holes all over the warm cake so the gelatin can seep in.
  • Dissolve the Jell-O in 1 cup boiling water, stir in 1/2 cup cold water, then pour evenly over the cake to fill the holes.
  • Refrigerate 2–4 hours until set, then spread whipped topping and optionally garnish with fresh fruit before serving.

Notes

Let the cake cool about 10 minutes so holes stay open but cake is still warm to absorb gelatin. Chill at least 2 hours for firmer slices. Store covered in the fridge for up to 3–4 days.
