Italian Sausage White Bean Soup

This hearty, creamy Italian Sausage White Bean Soup is packed with tender beans, smoky bacon, and fresh spinach. Comfort food without the cream!

Ingredients
  

  • 1 lb Italian sausage mild or spicy
  • 4 strips bacon chopped
  • ½ medium onion finely diced
  • 3 cloves garlic minced
  • 4 cans 14 oz cannellini beans, drained and rinsed
  • 4 cups chicken broth
  • ¼ tsp Italian seasoning
  • ¼ tsp dried rosemary
  • 2 small carrots peeled and chopped
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste

Instructions
 

  • 1. Brown the sausage and bacon in a large pot over medium heat until fat is rendered and meat is crisp. Remove to a plate.
  • 2. Sauté the onion in remaining fat for about 5 minutes. Add garlic and cook for 30 seconds.
  • 3. Stir in the beans, broth, Italian seasoning, and rosemary. Use an immersion blender to blend about half the soup (or mash by hand).
  • 4. Return sausage and bacon to the pot. Add carrots. Bring to a boil, then simmer for 15 minutes.
  • 5. Stir in the spinach and let it wilt. Season with salt and pepper. Serve hot.

Notes

You can add ½ cup of cream if you’d like it richer.
Swap spinach with kale or Swiss chard if preferred.
Add red pepper flakes for extra heat or diced potatoes to make it more filling.
To freeze, leave spinach out and stir it in after reheating.
