Ingredients
  

  • 16 ounces penne pasta
  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar Can substitute with white wine vinegar.
  • 2 teaspoons minced garlic
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated parmesan cheese
  • 4 ounces shredded iceberg lettuce (about 2-3 cups)
  • 4 ounces ham Sliced into 1/4 inch pieces.
  • 4 ounces pepperoni Sliced into 1/4 inch pieces.
  • 4 ounces salami Sliced into 1/4 inch pieces.
  • 4 ounces provolone cheese Cut into thin slices or small cubes.
  • 1 pint grape tomatoes Halved.
  • 1/2 cup sliced pepperoncini peppers
  • 1/2 medium red onion Finely diced.

Instructions
 

  • Cook the penne pasta according to package instructions, then drain and rinse with cold water to cool.
  • Mix all dressing ingredients in a bowl until smooth and set aside.
  • Slice the ham, pepperoni, salami, and provolone into bite-sized pieces.
  • In a large bowl, combine the cooled pasta with all salad ingredients.
  • Drizzle the dressing over the salad and toss to coat evenly.

Notes

Cut all ingredients into small, bite-sized pieces for better flavor integration. Combine all ingredients except for the shredded lettuce and dressing in advance, mixing in just before serving. Any medium-sized tubular pasta can be used, and red wine vinegar can be substituted with white wine vinegar if necessary.
