Ingredients
  

  • 1 pound short pasta penne or fusilli
  • cup sun-dried tomatoes in oil chopped
  • 2 tbsp oil from sun-dried tomato jar
  • 1 ½ cups heavy cream or coconut cream
  • 2 cloves garlic minced
  • 2 cups vegetable or chicken broth
  • ½ tsp red pepper flakes
  • Salt and pepper to taste
  • 1 cup mushrooms sliced
  • 1 small onion diced
  • 2 cups baby spinach
  • ¼ cup fresh basil chopped
  • 1 cup grilled chicken sliced (optional)
  • 1 can chickpeas drained (optional)
  • ½ cup freshly grated Parmesan cheese

Instructions
 

  • Heat sun-dried tomato oil in a large pot over medium heat.
  • Sauté garlic, onion, and mushrooms until fragrant and soft.
  • Add chopped sun-dried tomatoes and cook for 1 minute.
  • Pour in broth and bring to a simmer.
  • Add pasta and cook uncovered, stirring often.
  • As pasta softens, stir in cream, spinach, and any proteins.
  • Let everything simmer until the sauce thickens and coats the pasta.
  • Top with fresh basil and grated Parmesan before serving.

Notes

Use the sun-dried tomato oil for extra depth. Stir frequently to avoid sticking. If your sauce thickens too much, add warm broth or pasta water to loosen it up. For even more richness, try stirring in a spoonful of tomato pesto.
