Ingredients
  

Veggies

  • 2 large large cucumbers Use firm cucumbers and remove excess seeds if watery.
  • 1/2 cup red onion, finely chopped
  • 1 medium tomato, diced

Herbs & Heat

  • 1/4 cup fresh cilantro, chopped
  • 1-2 pieces green chilies, finely chopped Adjust to taste.

Dressing & Seasoning

  • 1 medium lemon, juiced Juice of 1 lemon.
  • Salt to taste
  • Black pepper to taste

Instructions
 

Preparation

  • Peel and dice the cucumbers into bite-size pieces.
  • In a mixing bowl, combine the cucumbers, red onion, tomato, cilantro, and green chilies.
  • Squeeze the lemon juice over the salad and season with salt and black pepper.
  • Toss everything together until well mixed and evenly coated.
  • Serve immediately or chill in the refrigerator before serving.

Notes

Chill briefly before serving to let flavors meld, but serve within a day for best crunch. For a protein pairing, try it with apple walnut chicken salad.
