Ingredients
  

  • 4 boneless skinless chicken breasts
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 lime zest
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large ripe mango, diced
  • 0.5 red onion, finely chopped
  • 1 small red bell pepper, diced
  • 1 jalapeño, minced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced
  • 1 pinch salt

Instructions
 

  • Whisk together honey, lime juice, lime zest, garlic, olive oil, chili powder, salt, and pepper.
  • Coat chicken with marinade and let rest for at least 20 minutes.
  • Mix mango, red onion, bell pepper, jalapeño, cilantro, lime juice, and salt to make salsa. Chill until ready.
  • Cook chicken in a skillet over medium heat for 5 to 7 minutes per side until internal temperature reaches 165°F.
  • Let chicken rest for 5 minutes. Top with mango salsa and serve.

Notes

For best flavor, use ripe mango and fresh lime juice. Let the chicken rest before slicing to keep it juicy.
