Ingredients

  • 1 lb boneless skinless chicken breast cubed
  • 2 tablespoons cornstarch optional
  • Kosher salt and black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1/3 cup honey
  • 1/2 cup low sodium chicken stock
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon hot sauce optional
  • Red chili flakes for garnish
  • Fresh parsley chopped, for garnish

Instructions

  • Toss chicken cubes with cornstarch, salt, and pepper until lightly coated.
  • Heat olive oil and butter in a skillet. Add chicken in a single layer and cook until golden on all sides. Work in batches if needed.
  • Add garlic to the skillet and cook until fragrant.
  • Stir in honey, chicken stock, lemon juice, and hot sauce. Simmer for 2-3 minutes until sauce thickens and coats the chicken.
  • Garnish with parsley and chili flakes. Serve hot over rice, noodles, or mashed potatoes.

Notes

Use chicken thighs for juicier bites. Add veggies like bell peppers or snap peas. Swap honey with maple syrup or agave. Double chili flakes for heat. Store leftovers in fridge for 4 days or freeze with a splash of stock for reheating.
