Ingredients
  

  • 2 medium sweet potatoes peeled and sliced into ½-inch rounds
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 ounces feta cheese crumbled
  • 2 tablespoons honey
  • 1 tablespoon chopped fresh thyme optional
  • ¼ cup chopped walnuts or pecans optional
  • 1 tablespoon balsamic glaze optional

Instructions
 

  • Preheat your oven to 400°F.
  • Peel the sweet potatoes and slice them into ½-inch rounds.
  • Toss the rounds in olive oil, salt, and pepper until coated.
  • Line a baking sheet with parchment paper and lay the slices flat in a single layer.
  • Roast for 20–25 minutes, flipping halfway through, until golden and fork-tender.
  • Let them cool slightly so the feta doesn’t fully melt.
  • Sprinkle each round generously with crumbled feta.
  • Drizzle honey over the top and finish with thyme and chopped nuts if using.
  • Optional: Add a touch of balsamic glaze for a tangy finish.
  • Serve warm and enjoy the perfect sweet-savory bite.

Notes

Try goat cheese, ricotta, or Parmesan if you're out of feta. Add red pepper flakes, swap in maple syrup, or pop them in the air fryer for a twist. Store leftovers in the fridge and reheat in the oven or air fryer.
