- 1 lb boneless chicken thighs or breasts
- 1 cup long-grain white rice
- ½ cup BBQ sauce
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 2 cloves garlic minced
- 1½ cups chicken broth
- 1 tablespoon olive oil
- Optional: chopped bell peppers corn, peas, or green onions
1. Heat olive oil in a large skillet or Dutch oven over medium heat. Sear chicken for 3–4 minutes per side until golden. Remove and set aside.
2. Stir in rice and garlic. Toast for 1–2 minutes.
3. Pour in broth, BBQ sauce, honey, and soy sauce. Stir to combine.
4. Return chicken to the pan. Bring to a simmer, cover, and cook for 18–20 minutes on low heat.
5. If using veggies, stir them in during the last 5 minutes of cooking.
6. Remove from heat. Fluff rice and let rest for a few minutes.
7. Slice or shred chicken, garnish with herbs, and serve hot.
Use long-grain rice for best texture.
Swap chicken for tofu or shrimp if you like.
For gluten-free: use tamari instead of soy sauce.
Freeze leftovers for up to 2 months.
Add chili flakes or smoked paprika for a spicy kick.
