  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (softened)

  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup whole milk

  • In a medium bowl, mix the flour, baking powder, and salt, then set aside.
  • Beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Gradually mix in the dry ingredients and milk in three alternating additions until just combined.
  • Fold in the strawberry purée carefully without overmixing.
  • Distribute the batter evenly between the prepared pans and smooth the tops.
  • Bake for 25-30 minutes until a toothpick inserted in the center comes out clean, then cool in the pans for 10 minutes.

Notes

Use fresh strawberries for the best flavor; if using frozen, ensure they are thawed and drained. To keep the cake moist, avoid overmixing the batter and ensure all ingredients are at room temperature before mixing. For added moisture, consider brushing the cake layers with simple syrup before frosting.
