Ingredients
  

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce or coconut aminos
  • Fresh cilantro or parsley for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat, add onions, and cook until soft, then add garlic and cook until fragrant.
  • Add ground turkey, breaking it apart, and cook until no longer pink.
  • Stir in smoked paprika, cumin, chili powder, salt, and black pepper to coat the turkey.
  • Add sliced bell peppers and cook until they begin to soften.
  • Pour in chicken broth, tomato paste, and soy sauce, stirring to combine and simmer for a few minutes.
  • Remove from heat, add lime juice, garnish with cilantro or parsley, and serve.

Notes

This dish is best enjoyed fresh but is also suitable for meal prep. Adjust the seasoning to suit your preferred spice level. For a saucier dish, consider adding more tomato sauce or chicken broth. Leftovers can be used in tacos, burrito bowls, or stuffed into baked potatoes.
