Grilled Garlic Mushroom Skewers

Ingredients
  

  • 2 pounds cremini mushrooms sliced lengthwise
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce or coconut aminos
  • 3 cloves garlic chopped
  • ½ teaspoon chopped thyme
  • 1 tablespoon chopped fresh parsley
  • ¼ teaspoon salt and pepper to taste
  • ½ teaspoon red chili flakes optional

Instructions
 

  • In a large bowl, mix olive oil, soy sauce, garlic, thyme, salt, pepper, and chili flakes.
  • Toss in the sliced mushrooms and coat well. Let them sit for 30 minutes (this is when I soak the skewers in water to prevent burning).
  • Skewer the mushrooms—twisting them slightly helps them stay in place! Grill on medium-high heat, about 2–3 minutes per side, until charred and tender.
  • Transfer to a platter, sprinkle with chopped parsley, and serve warm. I dare you not to sneak one before it hits the table.

Notes

Don’t skip soaking the skewers—they’ll burn otherwise. Wipe mushrooms with a damp cloth instead of rinsing them. Twist the mushrooms as you skewer them for a better grip.
