Garlic Butter Steak Bites and Potatoes (Quick, Juicy & Crispy)

Ingredients
  

  • pounds sirloin steak cut into 1-inch cubes
  • pounds Yukon Gold potatoes halved or quartered
  • 4 tablespoons unsalted butter divided
  • 4 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh thyme or chopped parsley for garnish

Instructions
 

  • Fill a large pot with salted water and bring to a boil. Add potatoes and cook until fork-tender, about 12–15 minutes. Drain and let them steam dry briefly, then gently flatten each one with a cup.
  • While potatoes cool, pat steak dry with paper towels. Season with salt, pepper, paprika, and garlic powder.
  • Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear steak cubes in batches for about 2 minutes per side. Transfer to a plate and keep warm.
  • In the same skillet, add 1 tablespoon butter and place smashed potatoes in a single layer. Cook undisturbed for 3–4 minutes per side until crispy. Season with salt if desired.
  • Push potatoes aside, melt remaining 2 tablespoons butter, and stir in minced garlic. Cook for 30 seconds, then return steak to the skillet and toss everything together.
  • Sprinkle with fresh thyme or parsley and serve hot.

Notes

Use cast iron for best sear. Let steak rest before returning to skillet. Add garlic last to avoid burning.
