Ingredients
  

  • 1 1/2 pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
  • 1 tablespoon olive oil

Instructions
 

  • Cut the beef into bite-sized pieces and halve the baby potatoes. Optionally, parboil the potatoes for a few minutes.
  • Heat olive oil in a skillet over medium-high heat and sear the beef until browned on all sides.
  • Mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to create the garlic butter sauce.
  • In a slow cooker, add the halved potatoes and seared beef, then pour the garlic butter sauce and beef broth over the top.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
  • Let the dish rest for about 10 minutes before serving.

Notes

Choose well-marbled cuts of beef for tenderness and ensure potato pieces are uniform for even cooking. Season beef before searing for enhanced flavor and use fresh garlic and herbs for better taste.
