Ingredients
  

  • 1 cup unsalted butter, room temperature
  • 2 cups granulated sugar
  • 1/2 cup vegetable or canola oil
  • 4 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 3 1/4 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup full-fat sour cream, room temperature
  • 1 cup buttermilk, room temperature
  • 3/4 cup rainbow jimmies sprinkles
  • 1 1/2 cups unsalted butter, room temperature (for buttercream)
  • 5 cups powdered sugar (for buttercream)
  • 1 tbsp vanilla extract (for buttercream)
  • 2–3 tbsp milk (for buttercream)
  • 1/2 cup sprinkles for decorating

Instructions
 

  • Preheat the oven to 350°F and prepare three 9-inch cake pans by greasing and lining them with parchment paper.
  • Combine flour, baking powder, baking soda, and salt in a bowl; set aside.
  • Beat the butter and sugar on medium-high speed until fluffy, about 3-5 minutes.
  • Gradually add oil, then incorporate eggs one at a time, followed by vanilla, scraping the bowl as needed.
  • Mix in sour cream, then alternate adding buttermilk and dry ingredients, starting and ending with dry ingredients.
  • Thoroughly mix the batter with a spatula and fold in the sprinkles.
  • Divide the batter among the prepared pans and bake until a toothpick comes out clean, about 30-35 minutes.
  • Cool cakes in pans for 30 minutes, then transfer to a cooling rack and chill in the fridge for about an hour.
  • For the buttercream, beat butter until smooth, then gradually add powdered sugar, vanilla, and milk to achieve desired consistency.
  • Level the cooled cakes, spread a thin layer of buttercream between layers, apply a crumb coat, and refrigerate for 20 minutes before frosting the entire cake.
  • Decorate the cake with additional sprinkles.

Notes

To create buttermilk, mix 1 cup of milk minus one tablespoon with 1 tablespoon of white vinegar or lemon juice and let sit for 10 minutes. Ensure all ingredients are at room temperature for better mixing and baking results.
