Ingredients
  

  • 2 cups sweet corn fresh, canned, or frozen
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 8 oz cream cheese softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • ½ cup chopped green onions
  • ½ cup diced red bell pepper
  • 1 jalapeño finely chopped, seeds removed for less heat
  • ¼ cup chopped fresh cilantro optional

Instructions
 

  • Prepare the corn by cutting kernels from fresh cobs, draining canned corn, or thawing frozen corn. Optionally, roast the corn in a skillet for added flavor.
  • In a large bowl, mix sour cream, mayonnaise, and softened cream cheese until smooth.
  • Add shredded cheddar and pepper jack cheeses along with garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper, mixing well.
  • Gently fold in the corn, green onions, red bell pepper, and jalapeño, adding cilantro if desired.
  • For a cold dip, refrigerate for at least 30 minutes before serving; for a hot dip, bake at 375°F for 20-25 minutes until bubbly.

Notes

For a Mexican Street Corn Dip variation, replace mayonnaise with Mexican crema and add crumbled cotija cheese. To add heat, mix in diced jalapeños or a dash of hot sauce. For a healthier option, substitute sour cream and mayonnaise with plain Greek yogurt.
