Ingredients
  

  • 1/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp dijon mustard
  • 2 cloves garlic crushed or minced
  • Salt and pepper to taste
  • 10 oz spring mix about 2 bags
  • 1/2 medium red onion thinly sliced
  • 4 oz feta crumbled or diced
  • 1 1/2 cups walnuts toasted
  • 2 cups strawberries sliced

Instructions
 

  • Preheat the oven to 350°F and toast the walnuts on a baking sheet for 8-10 minutes until golden and fragrant.
  • In a large bowl, whisk together olive oil, balsamic vinegar, honey, dijon mustard, garlic, salt, and pepper until emulsified.
  • Add spring mix, red onion, feta, walnuts, and strawberries to the bowl, then toss until well combined.

Notes

Monitor walnuts while toasting; they should be light golden brown and aromatic. Garlic is optional and can be omitted for those sensitive to it. Adjust salt and pepper according to taste.
