Ingredients
  

  • 1/2 lb. Spring Mix
  • 1 lb. Strawberries (sliced)
  • 3/4 cup Feta Cheese (crumbled)
  • 3/4 cup Sliced Almonds
  • 3 Tablespoons Sugar (for almonds)
  • 1/2 cup Dried Cranberries (optional)
  • 1/3 cup White Vinegar
  • 3/4 cup Sugar (for dressing)
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 teaspoon Poppyseeds
  • 1 to 2 Tablespoons Grated Onion
  • 1 cup Oil (neutral)

Instructions
 

  • Whisk together white vinegar, sugar, Dijon mustard, salt, and grated onion in a bowl until smooth, then mix in poppy seeds.
  • Slowly whisk in the oil to emulsify the dressing.
  • In a skillet, heat sliced almonds with sugar over medium-low heat until the sugar melts and coats the almonds, then cool on parchment paper.
  • In a large bowl, combine spring mix, strawberries, feta, cranberries, and cooled almonds, then toss with some dressing before serving.

Notes

Store the poppyseed dressing in a jar or airtight container in the refrigerator for at least 30 minutes before serving to enhance flavor. It can be kept in the fridge for up to one week; shake or stir before each use as ingredients may separate.
