Equipment

  • baking sheet
  • Parchment paper
  • medium bowl
  • rubber spatula
  • Cookie scoop
  • microwave-safe bowl
  • Piping bag (optional)

Ingredients

  • 15.25 oz strawberry cake mix
  • 8 oz block cream cheese, softened
  • cup cream cheese chips, roughly chopped
  • 20 oz Ghirardelli vanilla melting wafers
  • Sprinkles of your choice (optional)
  • ½ cup Wilton pink candy melts (optional)
  • ½ cup Wilton bright pink candy melts (optional)

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper. Spread the cake mix on the sheet and bake for 5 minutes until it reaches 165°F, then cool completely.
  • In a medium bowl, combine the cooled cake mix and softened cream cheese, mixing until light and creamy, then fold in the cream cheese chips.
  • Cover and refrigerate the mixture for 2 hours, then scoop and roll into balls on lined baking sheets.
  • Let the balls sit at room temperature for 15 minutes, then melt the vanilla wafers and dip each ball, adding sprinkles before the chocolate hardens.
  • Melt the candy melts and drizzle over the dipped cake balls, allowing them to harden completely before serving.

Notes

Ensure to add sprinkles before the chocolate coating sets to allow them to adhere. Store in an airtight container in the refrigerator for up to 5 days due to the cream cheese. For serving at room temperature, remove from the fridge about 15 minutes before serving.
