Ingredients
  

  • Golden Oreos
  • Melted butter
  • Freeze-dried strawberries
  • Cream cheese
  • Granulated sugar
  • Strawberry-flavored gelatin
  • Heavy whipping cream
  • Fresh strawberries diced
  • Vanilla extract

Instructions
 

  • Crush golden Oreos into fine crumbs and mix with melted butter until it resembles wet sand. Press into the bottom of a springform pan and chill.
  • Pulse more Oreos and freeze-dried strawberries into crumbs, mix with melted butter until crumbly. Set aside.
  • Whip cold cream until soft peaks form. Mix softened cream cheese, sugar, and strawberry gelatin until smooth. Fold in whipped cream and diced strawberries. Layer over crust.
  • Whip more cream. Beat cream cheese, sugar, and vanilla until silky, then fold in the whipped cream. Layer gently over the strawberry layer.
  • Smooth the top, cover, and chill for at least 6 hours or overnight.
  • Before serving, sprinkle and lightly press strawberry crunch topping over the cheesecake. Slice and enjoy!

Notes

Use room temperature cream cheese for smooth filling. Don’t rush the chill time. Store covered in the fridge for up to 4 days. Swap strawberries with other fruits or use gluten-free cookies to customize.
