Ingredients
  

  • 5 ounces Spring Mix Salad
  • ½ medium red onion, thinly sliced
  • 1 cup cherry or grape tomatoes, halved
  • ½ cup crumbled feta cheese
  • cup walnuts, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • In a large bowl, combine the spring mix, red onion, tomatoes, half of the feta, and half of the walnuts, then toss to mix well.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper until emulsified.
  • Drizzle the dressing over the salad and toss to coat evenly.
  • Transfer the salad to a serving bowl and top with remaining feta and walnuts.
  • Serve immediately.

Notes

For a milder onion flavor, soak the sliced red onion in cold water with ice for 5 minutes before draining. This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days, with dressing stored separately to prevent wilting.
