Ingredients
  

  • 6 cups fresh baby spinach
  • 2 cups strawberries, hulled and sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup walnuts, chopped (or pecans)
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions
 

  • Rinse and dry the baby spinach thoroughly. Hull and slice the strawberries and thinly slice the red onion.
  • In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper.
  • In a large bowl, combine spinach, strawberries, red onion, walnuts, and feta, then drizzle with the dressing and mix gently.
  • Serve immediately or refrigerate without dressing until ready to eat.

Notes
