  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 4 medium-sized potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Sear the chicken in a hot skillet until golden brown for enhanced flavor.
  • Transfer the seared chicken, diced vegetables, cubed potatoes, minced garlic, and bay leaves into the slow cooker.
  • Add dried thyme, salt, and pepper, then stir to combine.
  • Pour chicken broth over the mixture and add flour if a thicker stew is desired.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Serve the stew in bowls and garnish with fresh parsley.

Notes

Searing the chicken is optional but recommended for added flavor. You can customize the stew with additional vegetables like peas, corn, or green beans. Leftovers can be stored in an airtight container in the refrigerator and reheated on the stove or microwave. Leftover stew can be frozen in airtight containers for up to three months; thaw and reheat when ready to serve.
